They train different types of grips. Plate pinches is pinch grip (the strength of your thumb) while gripper work is crushing grip (like squeezing a bar or shaking a hand). It's good to train both types, although I spend more time on crushing than pinching. Grippers are just REALLY fun.
As far as gripping exercises go, would you say that plate pinches are viable enough on their own, or are grippers the most ideal method?
